Mango Sheera

A Quick and Easy Indian Delight 

Mango Sheera, also known as Mango Halwa or Kesari, is a rich and indulgent Indian sweet dish. This classic recipe combines the sweetness of mangoes with the nutty aroma of roasted semolina, resulting in a melt-in-your-mouth experience. It’s a quick and easy treat that’s perfect for special occasions or as an offering to the gods in temples. 

Ingredients: 

  • 1/4 cup ghee 
  • 1 tablespoon chopped cashews 
  • 1/2 cup semolina (sooji) 
  • 1 cup mango puree (made from fresh mango cubes) 
  • 1 cup boiling water 
  • 1/4 to 1/3 cup chopped mangoes (optional) 
  • 1/2 cup sugar 
  • 1/4 teaspoon cardamom powder 
  • A few saffron strands (optional, for Kesar Sheera) 

Method: 

Step 1: 

In a pot, bring 1 cup of water to a boil. Keep it simmering on low heat. 

Step 2: 

In a pan, heat ghee over medium flame. Add cashews and sauté until light golden. 

Step 3: 

Add semolina to the pan and roast until aromatic. Be careful not to brown it, just a light roast will do. 

Step 4: 

Stir in the mango puree and sauté for 2-3 minutes. 

Step 5: 

Slowly add the boiling water, mixing continuously to prevent lumps. Cook until all the water is absorbed. 

Step 6: 

Add chopped mangoes (if using) and sugar, mixing well. Sauté for another 3-5 minutes until the ghee leaves the sides of the pan. 

Step 7: 

Finally, add cardamom powder and saffron strands (if using) and mix well. Turn off the heat. 

Tips: 

  • Adjust the sugar according to the sweetness of your mangoes. 
  • Bansi Rava can be used instead of semolina for a variation in texture. 
  • Mango Sheera can be made without the addition of chopped mangoes, but they do add a delightful bite. 
  • For a saffron-infused variation, known as Kesar Sheera, simply add a few strands of saffron along with the mango puree. 

Storage: 

Mango Sheera will keep at room temperature for up to 2 days. It can also be refrigerated for up to a week, although the ghee may solidify, so bring it to room temperature before serving.
