Mango Matcha Pudding

This Mango Matcha Pudding is a delightful blend of sweet mango, earthy matcha, and the crunch of chia seeds, creating a dessert that’s both luscious and wholesome.  Ingredients: 

  • 2 ripe mangoes, pureed 
  • 2 cups milk 
  • 2 tbsp matcha powder 
  • 1/4 cup sugar (adjust to taste) 
  • 2 tbsp chia seeds 
  • 1 tsp vanilla extract 
  • A pinch of salt 

Method: 

Step 1: 

In a saucepan, combine milk, matcha powder, sugar, and salt. Stir continuously over medium heat until the mixture comes to a gentle boil. Reduce the heat and simmer for about 5 minutes, allowing the matcha to infuse the milk. 

Step 2: 

In a small bowl, mix the mango puree, chia seeds, and vanilla extract. 

Step 3: 

Slowly add the warm matcha milk to the mango mixture, stirring continuously until well combined. 

Step 4: 

Pour the pudding into individual serving cups or one large bowl. Chill in the refrigerator for at least 4 hours or until set. 

Step 5: 

Serve chilled, garnished with fresh mango slices and a light dusting of matcha powder.

  • For a vegan option, use plant-based milk such as coconut or almond milk. 
  • Adjust the sweetness to your taste by adding sugar.
