About This Recipe:

Mango Macarons are a delightful twist on the classic French pastry, infusing it with the irresistible flavor of fresh mangoes. With their smooth, chewy texture and creamy mango filling, these macarons are sure to impress your guests and elevate any occasion with their elegance and taste.

Ingredients:

  • For the Macaron Shells:
  • 100g almond flour
  • 100g confectioners’ sugar
  • 70g granulated sugar
  • 2 large egg whites, at room temperature
  • Yellow food coloring (optional)
  • For the Mango Filling:
  • 1 ripe mango, peeled, pitted, and diced
  • 100g cream cheese, softened
  • 50g unsalted butter, softened
  • 100g confectioners’ sugar
  • 1 tablespoon mango puree (optional, for extra flavor)
  • Yellow food coloring (optional)

How to Make Mango Macarons:

  1. Prepare the Macaron Shells:
  • In a food processor, combine almond flour and confectioners’ sugar. Pulse until finely ground and well combined. Sift the mixture into a large mixing bowl to remove any lumps.
  • In a separate clean mixing bowl, beat the egg whites using a hand mixer or stand mixer until foamy. Gradually add granulated sugar while continuing to beat until stiff peaks form. Add a few drops of yellow food coloring, if desired, for a vibrant hue.
  • Gently fold the almond flour mixture into the whipped egg whites until smooth and well incorporated. Be careful not to overmix.
  • Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small rounds onto a baking sheet lined with parchment paper, spacing them apart to allow for spreading.
  • Tap the baking sheet gently on the counter to release any air bubbles. Let the piped macarons sit at room temperature for about 30 minutes to form a skin.
  1. Bake the Macaron Shells:
  • Preheat the oven to 300°F (150°C). Bake the macarons for 15-18 minutes, or until they are set and firm to the touch. Remove from the oven and let them cool completely on the baking sheet.
  1. Prepare the Mango Filling:
  • In a blender or food processor, puree the diced mango until smooth. Strain the mango puree through a fine mesh sieve to remove any fibers or lumps.
  • In a mixing bowl, cream together the softened cream cheese and unsalted butter until smooth and creamy. Gradually add the confectioners’ sugar and mango puree, mixing until well combined. Add a few drops of yellow food coloring, if desired, for a vibrant color.
  • Transfer the mango filling into a piping bag fitted with a round tip.
  1. Assemble the Mango Macarons:
  • Pair up the cooled macaron shells of similar size. Pipe a dollop of mango filling onto the flat side of one macaron shell, then gently sandwich it with another shell.
  • Repeat with the remaining macaron shells and mango filling until all the macarons are assembled.
  • Place the assembled mango macarons in an airtight container and refrigerate for at least 24 hours to allow the flavors to meld and the texture to soften.
  1. Serve and Enjoy:
  • Before serving, let the mango macarons sit at room temperature for about 10-15 minutes to soften slightly. This will enhance their flavor and texture.
  • Garnish with mango slices or edible flowers for an elegant presentation, if desired.
  • Serve the mango macarons as a delightful dessert or sweet treat, and savor the irresistible combination of French sophistication and tropical indulgence.

Expert Tips:

  • Use ripe, sweet mangoes for the best flavor in the filling.
  • Ensure that the almond flour and confectioners’ sugar are finely ground and sifted to achieve a smooth macaron shell.
  • Be gentle when folding the almond flour mixture into the whipped egg whites to maintain the airy texture of the batter.
  • Allow the piped macarons to rest at room temperature before baking to develop a smooth surface and feet.
  • For optimal taste and texture, refrigerate the assembled mango macarons overnight before serving to allow the flavors to develop and the filling to set.
