Mango Cheesecake

Ingredients: 

  • Cream Crackers or Digestive Biscuits 
  • Honey or Melted Butter 
  • Ground Cinnamon 
  • Mangoes (fresh or frozen) 
  • Cream Cheese (or vegan substitute) 
  • Cream (light, heavy, or coconut) 
  • Vanilla Extract 
  • Sugar (granulated, cane, brown, or powdered) 
  • Agar Agar 
  • Water 

Instructions: 

Prepare Crust: 

  • Crush biscuits and mix with honey or melted butter and cinnamon. 
  • Press into a greased pan and chill. 

Prepare Mango Purée: 

  • Peel and chop mangoes, then blend into a thick purée. 

Make Cream Cheese Filling: 

  • Whip cream cheese, cream, sugar, and vanilla until smooth. 
  • Mix half of the mango purée with the cream cheese mixture. 

Prepare Agar Agar Mixture: 

  • Dissolve agar agar in water, then divide between the remaining mango purée and cream cheese mixture. 

Layer and Chill: 

  • Layer mango cream cheese mixture over the chilled crust and chill. 
  • Spread the remaining mango-agar agar mixture over the set cheesecake. 

Final Touches: 

  • Decorate with toppings like chopped mangoes or cocoa powder before serving.

  • For easier handling, make individual servings in glasses or bowls. 
  • Ensure cream cheese mixture and mango purée are at room temperature before adding agar agar. 
  • Allow ample chilling time for the cheesecake to set properly, ideally overnight.
