Mango Amrakhand

A Refreshing Summer Treat 

Amrakhand, or Mango Shrikhand, is a traditional Indian dessert that combines the sweetness of mangoes with the tang of yogurt, resulting in a creamy and refreshing treat. This summer, indulge in the delights of Mango Amrakhand, where the sweetness of mangoes meets the creamy tang of yogurt. 

Ingredients: 

  • 2 cups plain yogurt (full-fat, creamy yogurt is best) 
  • 1 cup mango puree (made from ripe, sweet mangoes) 
  • 1/4 cup sugar (adjust to taste) 
  • A pinch of saffron (optional) 
  • 2-3 cardamom pods, powdered 
  • A few chopped pistachios for garnish (optional) 

Method: 

Step 1: 

Hang the yogurt in a muslin cloth for about an hour to drain excess whey and achieve a thick, creamy consistency. 

Step 2: 

In a bowl, mix together the hung yogurt, mango puree, sugar, saffron (if using), and cardamom powder. Whisk until the mixture is smooth and well combined. 

Step 3: 

Chill the Amrakhand in the refrigerator for at least 2 hours to allow the flavors to meld and intensify. 

Step 4: 

Serve chilled, garnished with chopped pistachios and a few strands of saffron (optional). 

 

Tips and Variations: 

  • For a vegan option, use coconut yogurt or any other plant-based alternative. 
  • Adjust the sweetness to your taste, as the natural sweetness of mangoes can vary. 
  • A touch of rose water or a few drops of mango essence can enhance the mango flavor. 
  • Try adding a pinch of ground cardamom or a tiny pinch of nutmeg for a warm, spicy note.  

Storage: 

Mango Amrakhand will keep in the refrigerator for up to 3 days. Stir well before serving, as the mixture may separate over time.
