About Mango Murabba 

Aam Ka Murabba is a traditional North Indian delicacy made with raw green mangoes and sugar. Enhanced with the flavors of cardamom and saffron, this Murabba offers a perfect balance of sweetness and tanginess. It’s a delightful way to savor the essence of mangoes even when they’re not in season. 

Recipe Instructions: 

  1. Prepare Mangoes: 
  • Start by rinsing and peeling raw mangoes, then grate or shred them finely. 
  • In a mortar-pestle, powder green cardamoms and cloves, then set aside. 
  1. Making Aam Ka Murabba: 
  • In a pan, combine the shredded mangoes with sugar. Adjust the quantity of sugar based on the sourness of the mangoes. 
  • Cook the mixture over low heat, stirring continuously until the sugar melts and the mixture thickens to a jam-like consistency. 
  • Add the powdered cardamom-cloves mixture and crushed saffron to the cooked mango mixture. Mix well to incorporate the flavors. 
  • Allow the Murabba to cool completely before transferring it to a sterilized glass jar. 
  • Store the Aam Ka Murabba in the refrigerator for long-term preservation. 

Recipe Notes: 

  • Opt for firm and sweet mango varieties for the best results in Murabba. 
  • Adjust the quantity of sugar according to the sourness of the mangoes and your personal taste preferences.
